Summary |
"The program will extend students' knowledge, cultural awareness and understanding of food in Australia. It explores the relatively recent culinary move towards 'Australian bush food'. It looks at the different fruits, herbs and spices that have been part of the Australian Aboriginal diet for thousands of years. The program explains traditional uses of some indigenous foods and shows how some cooks are combining them into modern meals. The program looks at a native garden and the range of products sold at markets and fairs, as well as a commercial scale operation. Preparation methods are highlighted in a visit to a restaurant kitchen where a chef demonstrates how to make a simple meal and gives tips on the best uses of native ingredients." -- ABC schools TV website |
