Summary |
Before Poh leaves Western Australia she goes to visit her friend French chef Emmanuel Mollois, who gives her the challenge to come up with a 'Poh's Kitchen' macaroon. Macaroons are one of Emmanuel's specialties and are all the rage in Paris. These delicate biscuits - crisp on the outside and gooey on the inside are coloured in every colour of the rainbow and filled with the most exotic flavour combinations - like jasmine/ mango, rose, chestnut, blackcurrant/violet and even caramel and salted butter. Emmanuel gives Poh a tour of his kitchen where macaroons are being made and shows her how he mixes and experiments with colours for the famous biscuit. Back in Poh's kitchen, Emmanuel shares two of his macaroon recipes. One is a classic - the other is a brand new invention and a surprising combination - but the flavour is unbelievable. To complement the idea of colour and crazy fillings, Poh cooks a classic Malaysian version of a macaroon that she remembers making as a child that is nicknamed 'sticky marbles'. 'Onde Onde' is a glutinous rice ball with a palm sugar filling that melts when it's cooked and bursts in the mouth when eaten. Emmanuel is amazed at the sensation! To continue the theme of colourful, flavour-filled snacks, Poh comes up with four different glutinous rice ball recipes - each a different colour and each with a surprising filling. Poh explores the history of macaroons and finds they have a royal connection. Poh also explains the art of matching food flavours with tea.
