Summary |
Maeve and Guillaume experience the thrill of the hunt amongst the oak trees of Perigord with trained dog Alfonse leading them and France's truffle king Pierre-Jean Pebeyre to find the edible underground fungus referred to as the black diamond. Inspired by Paul Bocuse, Guillaume uses slivers of truffle under the skin of a plump chicken ready to roast and serves it with cauliflower puree and sauteed cauliflower with caramelised eschallots.
